Stuffed Peppers, Mexican Styles

Believe it or not, I've never made stuffed peppers before. I've stuffed a lot of things in my day, but not peppers. LOL. For some reason I had it in my head that it is a time consuming task. I'm not sure why I thought this because it couldn't be farther from the truth. I guess you could make it difficult but these babies were super easy and VERY filling. I couldn't even finish it all and this girl can EAT.

Stuffed Peppers, Mexican Styles
Ingredients
1 cup dry quinoa, cooked according to pkg
1 can black beans
1 red pepper
1 cup corn
1/2 cup salsa
1 tsp cumin
2 tsp chili powder
2 tsp garlic powder
salt to taste
1/2 cup water

Directions:
Add all ingredients to a pan except for the pepper and cook until heated throughout, about 10 minutes. Wash the pepper and slice the top off. Make a clean cut so that you can bake that top too so it has a nice hat. lol Clear out the insides and stuff that sucker with your mixture. I made mine heaping. Bake at 375 for 30 minutes. Serve with a side of steamed veggies and a LOT of Valentina hot sauce! YUMMERS

That is some MAJAH food porn right there. I wanted to take more pics but I figured 4 was enough. It is only one meal. But it was so beautiful. All the colours and flavours were amazing. And my hot sauce went perfectly with it. I served it with a side of steamed broccoli with lemon juice, chili powder and garlic powder on it. 

This meal was super tasty and easy. The ease of this dish actually surprised me. It made me feel all fancy. lol Can't wait to make more of these. I don't eat peppers very often anymore so this was a treat!

Very yummy too. And a nice change of pace. I love my green smoothies. They are delish and fueling. But its always nice to switch it up. 

I know everyone is always happy it be Friday but man am I glad its Friday. Seems like this week has gone on for months. I've been so busy this week and had a lot of late nights plus I haven't slept well so I'm looking forward to some extra shut eye this weekend. I took last night off the gym (hey! a gal needs at least one day off) so I'm looking forward to working the shit outta it tonight. Then collapsing on the couch with a movie. Hmmmm, maybe I'll watch one of the documentaries I have on my computer. There's a bunch of food related ones I've been meaning to watch. 

Hope everyone has a kick ass weekend. Mine will be pretty low key again. Just found out the Golden Globes are on this weekend. I didn't even know what they hand out these awards for. Apparently its TV and movies. I just wanna see all the clothes. And I love a man in a nice suit/tux. I sure hope Ryan Gosling will be there. He looks good all dressed up......and dressed down. Ha
