Stuffed Acorn Squash

It was my mother's birthday this week and I wanted to take her to lunch downtown this weekend. We planned on Saturday but as the day approached she asked if I would like to cook her lunch rather than go out. I was ecstatic! I love cooking for people and don't get to do so for my mom very often. I know she loves healthy eats so I could basically have my way.

She really wanted to try my dressing "Asian Sensation" so I made us a big salad. I also decided to make a stuffed acorn squash. It is winter so I wanted to use wintery veggies so I opted for the squash and leeks.

Stuffed Acorn Squash
Ingredients
1 carrot
4 stalks kale
4 pieces sui choy (napa cabbage)
1 leek
1 small can low fat coconut milk
1 tsp Vegeta (veggie stock)
1 acorn squash
1 tsp chili flakes
1 lemon

Directions:
1. Cut the squash in half, remove seeds and bake face down at 350 for 40 minutes.
2. Process the carrots, kale and sui choy in a food processor. If yours is small like mine do them one at a time.
3. Chop the leek into small pieces, using both the white and green parts.
4. Saute the veggies including the leeks with about a 1/4 cup of water for 5 minutes.
5. Add the coconut milk, Vegeta, spices and lemon. Cook for another 8 minutes.
6. Once the squash is done baking and is cool enough to touch, scrape out the flesh and mix together with the veggies. Mash the squash so its not chunky.
7. Put the filling back into the squash and top with sesame or hemp seeds. Bake for 15 minutes and serve!

That's an amazing meal right there!
This was such a nutritious and gorgeous looking meal. I love when I eat very colourful foods. I know I'm getting a variety of nutrients and flavours. Mmmmm. Other than the wheat that's in the soy sauce, this meal would be gluten free. And I didn't use rice or quinoa, which I normally would. I wanted the meal to be very easy to digest but very filling and nutritious.

I love squash. And acorn is a fave fo sho. Delicata and Acorn are fighting for top spot. But Delicata's elusive nature makes it a little more exotic. Lol If you know where to find some in Vancouver, holla!!
