Restaurant Review: Nuba

I also went to Nuba before Vegas as well. I know I know, eating out so much is not usually how I roll. BUT I love eating!

I've been to Nuba a number of times and I LOVE it! Its got a great atmosphere and GREAT food. Its a good place to take anyone expecially if there's vegans in your party and nonvegans too because everyone can eat without being stuck with a subpar option. Vegans/vegetarians usually have to settle for salad or pasta. Not cool.

Nuba is a Lebanese restaurant in Gastown. They have other locations but they are smaller cafe type places. My friend Jason and I decided to get the La Feast. It has a little of everything. I suggest this or getting a couple of Mezze in case someone isn't cool with eating veggie but it didn't bother Jason.

It was more than enough food for two. We were quite full.


La Feast also starts with hummus, baba ghanooj and whole wheat pita. The hummus is pretty much to die for. Its hard for me to choose a fave item in La Feast. The falafel is one of the best I've ever had, the cauliflower is a majah contender for first place but the lentil dish is a solid one too. Even though I dislike eggplant, the stew is amazing too. And served with brown rice. Hmmmm.....

Nuba never fails. Try it!

Restaurant Review: Bao Qi

Sorry for the delay folks but I've been having technical difficulties with my Internet and then I went to VEGAS!! My bestie Leanne got married down there so a bunch of us went down for the stagette and wedding. It was amazing!

Before I left, I tried out a couple of restaurants in town that I wanted to write about. I love Vietnamese food. And I do not eat it enough. I have heard of this restaurant BaoQi Eatery on Davie Street before from my friends at the Vegan Project but I had not tried it until now.

I have to say, they were right. It was delish!

I got the 2 vegan items: the vegan sub and vegan roll.


Sorry, but I was SO hungry I couldn't wait for the pic. This was the Autumn roll with peanut sauce. Its vegan and amazing. After that I had the vegan sub:


Now normally I would never have white bread but if you're going to eat a Vietnamese sub then you just have to do it, unless you make ur own (which I've done). This is with lemongrass tofu, pickles daikon and carrots, cilantro, cucumber, jalapeno and an avocado aoili.

All the recipes here are family recipes. They are amazing, try it!!!


Now this is my friends Jimmy's entree. Its not vegan but they do have a veggie option which I'm so getting next time! It smelled amazing. Its some peanut beef rice noodley dish. YUM!! Jimmy said it was goooood.


Then we went to a movie. LOL I'm so cool.

Hahaha, okk that's one restaurant review for now. Got others. Well I've got a lot to update on so I'll be back!

Restaurant Review: Sushi Bella

After watching the debut of my friend Nikki's collection at Vancouver Fashion Week on Thursday, I went out to Sushi Bella with a couple of friends. I don't dine out on West 4th very often, I guess cause I'm sans car.....BUT I love trying new restaurants. Even if they are just another Vancouver sushi restaurant.

This place actually surprised me. I didn't get my usual: Veggie combo. I got a specialty roll and agedashi tofu. Now this wasn't your typical agedashi tofu, it was a trio:

Three kinds of flavors on deep fried tofu: mango salsa, traditional, chili spice


That is bonito on top, which I scraped off. I forgot to ask about that, Woops. Bad vegan, Bad! These were absolutely delish!!! I really loved the mango one. It had such a unique flavour and was totally non-traditional. LOVE that. And the chili one was awesome, I love spicy food, even thought this could have used a dousing of Sriracha. lol And the traditional one was perfection. Nuff said. 

Soy Bean Paper Roll

Asparagus, oshinko, bed beets, yam, avocado, cucumber, spinach, shitake


Mind you they did forget the oshinko (yellow pickle) which was slightly disappointing because I love it, but not really a big deal. I have lots at home. I really liked how the roll didn't have a ton of rice. I've been on a health challenge, so I'm not really eating white rice right now, but This was so little I let it slide. Lol I liked how they used the soy bean rice paper instead of seaweed, and they jammed this roll full of tons of ingredients. So tasty!!

My friends food looked quite delicious too. The presentation is very beautiful at Sushi Bella. Plating does a lot for a dish, makes it inviting.


Obviously I did not have any of this, but I thought it looked nice. And I liked how they used beets thinly sliced instead of daikon. I do love daikon but this was a nice change and added a great colour to the dish and flavour when you put it on top of your sushi.

If you're ever on West 4th in Vancouver and have a craving for sushi, check out Sushi Bella. It has more of a romantical atmosphere, so it would be a good date spot or if you wanted a bit of a fancier sushi night.

She's so pretty! It was so fun! Not only was one of my oldest friends presenting but 2 of her friends were also presenting too. It was really cool to see what they've been working so hard on. And I really liked how you could see their personalities through the clothes they made. Good job Britney, Wilber and my girl Nikki!!!

Steamed Veggies!

I made the biggest wok of steamed veggies EVER last night. SO much. SO good. I used fresh and frozen (gasp!) veggies. I usually never use frozen veggies, always fresh, other than corn. But they were on special at No Frills and I figure its a nice thing to have around when you're too lazy to chop them. 

Day 3 of my health challenge is going ok so far. Yesterday I had a crappy day and really just wanted to go home and curl up in bed with the X Factor but I toughed it out and gymed it up. Only problem was that I forgot my ipod at work so I had to run on the treadmill sans ipod. Now I'm sure I've expressed my dislike for the treadmill before so y'all know I prefer to run outside, but let me tell you: running on a treadmill sans ipod is waaaay worse then with one. I made it to 45 minutes, how I don't know, sheer determination and the stubbornness that runs through any person in my family. 

I also got my new wireless modem from Telus last night. It looks so complicated. I actually opened the box, took a look then closed it again. Jeez. I was def not in the mood for that. Even though I've been suffering without internet since LAST Sunday. Sigh.

Anyways, I don't have an actual recipe because, well I don't think steamed veggies needs one. But here's what I did:

I put broccoli, green swiss chard, kale, baby bok choy, edamame, bean sprouts and frozen mixed veggies - oriental mix (lol). Plus a freshly squeezed lemon, soy sauce, vegeta, garlic powder and sesame seeds.

I put that on top of TruRoots Organics Sprouted Bean Trio which I tossed with green curry. YUMMY.


Sorry for the craptastic pics but I thought I didn't have my camera at home so I used my Blackberry. Sucky. Turns out I did have it, it was just lost in the abyss that I call my purse. 

No cooking tonight, my friend is debuting her collection at Vancouver Fashion Week!! Yah Nikki! Love this girl. We've been friends since grade 5!!! Wow, I'm old. :(

Maybe I'll have a restaurant review though, grabbing a bite afterwards.

Stuffed Delicata Squash Mexican Styles

Its the official Day 1 of my 30 day health challenge but I'm calling it Day 2. I partially started yesterday but as I said, I had vegan junk food leftovers to eat. Which was glorious. I followed the plan I outlined yesterday so far for today except for one deviation. As my mid morning snack I had half a cup of my homemade granola with a splash of almond milk and fresh raspberries. You can get my granola recipe here.

I made a lovely dinner last night. SO delish. I have tons of the stuffing leftover for a great carb free lunch. 

Stuffed Delicata Squash Mexican Styles
Ingredients
1 delicata squash, seeds removed and cut length wise in half
1 can chickpeas (wanted to use black beans but didn't have any)
1 cup corn
3 roma tomatoes, chopped
1 jalapeno, diced
1 garlic clove, minced
2 tbsp chili powder
1 fresh lemon, juiced
1 handful cilantro, chopped
1/4 cup salsa
1 tsp cumin
1 tsp garlic powder
1/2 tsp sea salt
1 tsp olive oil
1/4 cup water
1/2 avocado

Directions:
1.  Roast squash for 30-45 minutes. Until soft.
2. Saute onions and garlic in 1 tsp olive oil until fragrant. Add the 1/4 cup water, corn, tomatoes and jalapeno. Cook for 5 minutes.
3. Add remaining ingredients and cook until chickpeas are soft. 
4. Stuff the squash and top with avocado.

Note: Daiya would be good on top too, or crushed cashews.

I served mine with quinoa. The squash and stuffing can be filling so a nice light side dish would go great. Or none at all if you don't have a big appetite.

Kale Quinoa
Ingredients
1 cup uncooked quinoa
4 kale, stalks removed
1 tsp vegeta
1/4 cup water

Directions:
1. Cook quinoa according to package.
2. Finely chop kale or process in food processor.
3. Near the end of the quinoa cooking time add in the kale and vegeta. Use another 1/4 cup of water if needed. 

So far Day 2 is going good. No crazy sugar cravings yet. But that being said, I've had fruit so maybe later. lol The first 3 days getting off anything is tough. I always have a tough few days when I quit coffee. Which I've been off of since August I think. Sugar is worse though. Its like crack. 

Tonight's meal will be rather simple. I'm just cooking for myself so I'll just do a big pot of greens, whatever kinds I have in my fridge. I did my 1 hour run last night as well as a leg workout. Today will strictly be cardio. I did weights 2 days in a row. Well I'll probs do some abs and push ups. 

Did you start ridding your cupboards/fridge of processed foods yet? Ditch the processed crap and start making your food from scratch. Its not really all that more time consuming once you get the hang of it. And your palate will change too. You'll really start to taste all the flavours. DO it!

30 Day Vegan Health Challenge

Alrighty peeps, time to buckle down. Its full on fall now. Its chilly and we're sad summer is over and now Christmas is coming. You might already have packed on 5 lbs from cozying up on the couch with your hunny and carbo loading. BUT fear not, this challenge will WHIP you into shape. And make you beam with healthiness. Today when I went to my local Vitamin store, the lady said I looked like the picture of health.LOL Try this and you too could be the picture of health!

30 Day Vegan Health Challenge:
§  This is a whole foods health challenge. The trick is to eat little to no processed foods.
§  Start the day with hot water with a freshly squeezed lemon
§  Eat/drink at least 32 oz of green smoothies a day. Can be a meal replacement, snack or part of a meal
§  No white flours, sugars, or potatoes
§  Avoid all caffeinated beverages other than green tea (no pop or juice!)
§  Consume as much of fresh produce as possible, trying to eat 50-60% of your daily diet in a raw form. (try eating a salad with every meal or having a salad AS your meal once a day, snack on raw fruits and veggies, smoothies, etc)
§  Eat WHOLE grains instead of bread, pasta, or noodles. (Brown rice, quinoa, millet, buckwheat, rolled oats, etc)
§  Eat beans and other legumes daily, tofu 1-2 times per week
§  You will eat every 2-3 hrs
§  The key here is to eat WHOLE foods. Obviously I am vegan, and this is a vegan challenge BUT if you aren’t going to do it veganlly then eat meat. But NO dairy. And NO processed meats. Stick to actual chicken, fish eggs or whatever meat you eat.
§  Try to avoid premade sauces and dressings. It’s very easy to make your own. I make my own with fresh lemon or lime juice, mirin, soy, apple cider vinegar, and spices.


Exercise
§  I commit to exercising 5-6 times a week: 3 days of weight training and 5-6 days of cardio training. (I already do this, just not that many days of weights)
Other
I am not bold enough to post before/after pictures or my weight. BUT I will do it for myself and let you know the progress I have made (if any!)
I will post recipes and the menu plans of the foods I eat throughout the day so that you can get some ideas on what you should eat.
I will weigh myself only once a week and take measurements to see if I took off any inches or gained some muscle.
The Plan
Day 1: As I am starting this challenge after having made a load of vegan junk food. I am going to give myself this day to half ass it. Lol. I finished my vegan mac and chreese for lunch along with a salad, so not all that bad. Plus I have some coconut yogurt left to finish.

Breakfast: ½ serving VEGA Whole Food Health Optimizer (Berry Flavour) mixed with water, I cup homemade granola, ½ pint fresh raspberries, 3 tbsp’s strawberry coconut yogurt and a sprinkling of hemp seeds

Snack: 1 bosc pear

Lunch: 2 cups leftover vegan mac and chreese, I bowl salad with broccoli slaw, radishes and carrots. Topped with a soy sesame lime dressing
Dressing: 1 fresh lime, 3 tbsp soy sauce, 5 tbsp mirin, splash sesame oil, sprinkling sesame seeds and garlic powder

Snack: Green apple or more salad

Dinner: Roasted Delicata squash (no oil) stuffed with black beans, corn, tomatoes, onions, jalapeno, lemon, cilantro and chili powder.

(I haven’t made it yet, so it might vary slightly, but that’s the plan; recipe in tomorrow’s post)

Snack: 8 oz Green smoothie: mixed berries, 1 cup water, 1 tsp spirulina powder, ¼ avocado, 1 cup freshly made veggie juice

EXERCISE PLAN: Run on treadmill for 1 hour, 15 leg work out (squats, lunges, etc)

Day 2:
Breakfast: ½ serving VEGA Whole Food Health Optimizer (Berry Flavour) mixed with water, 16 oz green smoothie: 1 banana, 1 bosc pear (peeled and cored), 1 cup mixed berries, 1 tsp spirulina powder, 1 cup water, 1 cup freshly made veggie juice (previous night).

Snack: roasted delicata squash

Lunch: Salad with broccoli slaw, radishes and carrots topped with sesame soy dressing and a bowl of chickpea veggie chili.

Dressing: 1 fresh lime, 3 tbsp soy sauce, 5 tbsp mirin, splash sesame oil, sprinkling sesame seeds and garlic powder

Snack: roasted delicata squash

Dinner: Steamed greens: baby bok choy, kale, broccoli with fresh lemon, garlic and vegeta. Put on top of brown rice or quinoa

Snack: 1 cup mixed berries, 1 tsp spirulina powder, ¼ avocado,1 bosc pear (peeled and cored), 1 cup water

EXERCISE PLAN: Run on treadmill for 1 hour or 45 minutes treadmill, 15 step machine (sigh)

So there you have it. My plan for the next 30 days, and a meal plan for today and tomorrow. I will continue to update you with meal plans that I'm following. And with my exercise routine. I did a 45 minute run last night and about a 45 minute weight training sesh too. I'm going to do the weigh in and measurements tomorrow. 

Now hopefully, because I've made this public this means I will stick to it. Eeekbestie's wedding with my other bestie. We're both health nuts so it shouldnt' be a problem. As you will notice, there isn't a "no alcohol" clause in my plan. I like alcohol and will continue to drink it throughout just in moderation. There will be no moderation for Vegas BUT before and after there will be. I'm going to bring all my protein powders and spirulina and chlorella to keep detoxed and healthified BUT I'm gonna party!!! You can still have fun and be healthy, I swear.

Vegan MoFo is Over: Vegan Junk Food


This is it, Vegan MoFo is over. Last night I was craving some Vegan junk food. A fellow vegan friend has been talking about Tofurkey pizza and I just wanted something that would satisfy my craving for cheeziness. I didn't want to get a whole pizza because, well that's a little much and plus I wanted some other bad snacks like chips and Halloween candy. Yah, I went over board.

YUM!! All my ingredients to make my junk food. Its actually not that bad considering I got the vegan, gluten and soy free Penne and Chreese. I also have soy free earth balance and used lots of veggies in it also. 


Looks kinda like hamburger helper sans hamburger. Lol. Got some broccoli, onions and roasted delicata squash in my junk food. Maybe its not all that junky...? THe ingredient list on the mac and chreese is actually pretty small. And I think it was no msg too. BONUS!


NOW that my junk food craving is gone. Its back to health. I have a new challenge that I'm starting. Sorta today but since I had leftover mac and chreese I kinda had to half ass it today. But don't fret, It starts in full force tomorrow. I'll do a separate post for it so you know what it is and if you wanna join in, DO IT!

So, in regards to my junk food. To make it less guilt inducing I added broccoli, onion, roasted delicata squash, jalapeno and low fat almond breeze milk. The seasonings I added were chili flakes, garlic powder and 1/4 tsp sea salt. Not bad at all.

Peace MoFo's. That's my last MoFo for the year.

That being said, Happy World Vegan Day!!!! Its the 67th Birthday of the term vegan. YAHHHH!
