Daily Eats

I went to Costco yesterday to pick up toilet paper and body wash. So I zipped over to T&T to grab a few Asian foods that I can't get anywhere else. I had none in mind, just love eating Asian food so I took a look. I found these cool Soy Sheet Twists. I've never seen them before. And am I glad I saw them! They are so fun and so good!

Here's what I picked up:

King Oyster Mushrooms, shredded seaweed (sea tangle), rice noodles, Shirataki style Konnyaku noodles and Soy sheet twists.

I immediately ran home to make something with my new food. I was also starving after a workout. I just tossed them together and came up with this:

So inside that delish bowl is soy sheet twists, broccoli, king oyster mushrooms, garlic, green onion and the sauce is chili flakes, soy sauce and garlic powder. I didn't use any oil. I used water. Although, sesame oil would have been awesome!

I'm not sure if you know this about me but I'm kinda a chip addict. Well a recovering chip addict. When I do fall off the wagon its usually pretty hard. Lol I'm always on the lookout for low cal, low fat, low crap chips or chip like snacks. Anything to give me that salty, crispy satisfaction that a good greasy chip does. Popchips and Cheecha puffs are my faves. But I am also a lover of chips and salsa. I was at choices the other night and saw these babies! Only 120 cals per serving, gluten free, organic, vegan, nut free....um the list goes on. AND they are delish!

They have other flavours too, but not all vegan. These went quite well with my salsa. YUM. ALSO, just an FYI to any Vancouverites out there, at Choices on Davie, the collard greens are 2 for $3!!! Crazy cheap! Its usually more than that for one. YAH.

This lead to my next little quicky meal I whipped up today.

This is the sauce. I put 2 tsp of tahini, 1 lemon, juiced, 1 tsp tamari, 1 tsp agave nectar, 1 jalapeno, 3 garlic cloves and a splash of water. Blend and YUM!

Then I tossed it with some steamed collard greens, kale, soy bean sprouts and hemp seeds. It was super yummy.

It was seriously yummy. I used 6 collard green leaves, 1/4-1/2 bunch kale and a couple handfuls of bean sprouts. I've been eating WAY too much soy lately. I'm not sure what's up with that. I usually don't. Its about 2 times a week typically. Maybe because I've found all these cool soy products. But I'm also thinking its cuz I haven't been eating a lot of beans and because I was off my VEGA whole health optimizer while on a cleanse. I'm back on VEGA and just prepped some dried adzuki and pinto beans to create something beany. Lol

There you have it, a look inside what I eat on the regular. The next few days will be packed full of kale, collard greens and sui choy. I've got a lot of it. Can't wait. EAT YOUR GREENS PPL!!

Peace

Black Bean Soup

I haven't made a black bean soup in a long time. It usually doesn't last long in my house because I just love it so much. Its such an easy filling meal. You top it with a little salsa and avocado/guacamole and BAM!!! Delish meal right there. Its filled with fibre, vitamins and minerals.

I figured the soup would be pretty safe if I made it back to back with another soup. That way I'd have too many options for lunch and would HAVE to freeze some. Yah! Plus I used way more beans this time.

Pureed Black Bean Soup
Ingredients
4 cups dry black beans, soaked overnight and rinsed
1 onion, chopped
2 jalapenos, chopped
3 garlic cloves
6 cups water
2.5 tsp cumin
4 tsp chili powder
2 bay leaves
3 tsp Vegeta (dry veggie stock)
3 tsp chili flakes
1/2 tsp sea salt

Directions:
Place all ingredients into your slow cooker and cook for 8 hours. Remove bay leaves and puree until smooth. Taste and add any additional seasoning to your taste.

TIP: Make sure you soak your dried beans overnight and rinse them. The more you soak and rinse the easier they will be to digest. And by that, I mean you won't fart as much. You know what they say, beans are the magical fruit. But the more you soak them the better. If you use canned beans make sure its 4 cups, which should be about 2 of the larger cans. And rinse those too. But they don't need to be soaked.

Black Bean Soup

Yummy!!! And super filling because its pretty much just pureed beans. It kinda turned out like refried beans so if you want it to be a little more "soupy" I'd add one more cup of water. I like it thick like this. Delish!

I'm still totally obsessed with collard greens. I pretty much eat them every day as wraps. Snack on those suckers and you're one happy camper. I started adding jalapenos and sprouts to them. SUPER good!!! I love spicy food!

This one has hummus, carrot, jalapeno, roma tomato and sprouts. I even got a friend at work obsessed with them too. Its such a great way to get major nutrition in a delish way.

My new thing is making my own protein balls. I tried last week and it was a partial fail. Not sure if I talked about it. I say partial because they were damn tasty but they wouldn't ball up. Jerks. So I just ate them straight from the bowl. Lol. I'm classy like that. So I picked up about 5 or 6 different recipes and I'm gonna try a couple out tonight I think. At least one. And these are all no-bake balls. Lol Mmmmm

I was so surprised  that the gym wasn't a gong show last night. It was pretty busy but I was able to get on a treadmill! Yay! But I couldn't' take a shower after, I had to wait. It was a zoo. I think the snow scared everyone off. And tonight I have my first skype date with a friend in Korea so I'll be going a bit later, so there better be a treadmill for me then! You hear that?!! LOL

Peace

Gettin Fresh

I've known the glory of collard greens for a while now. They are probably the best vegetable for a person to eat. They have pretty much everything and beat kale in terms of nutrient density. Although not by a landslide. Kale is awesome. I eat it almost every day. Collards are something I'd like to bump up to almost every day too.

Here are some facts about collards that I got from this website.

Look at that!!! And at only 49 calories per 100 grams, that's awesome! So instead of using tortillas or other lettuce for wraps, use collard greens. You'll get way more nutrients and more bang for your buck. If you want to know how to use collard leaves as wraps watch this video by Ani Phyo. She's awesome. LOVE her. I really want to add more raw foods in my diet and she is def an expert. Check her out!

Anyways, back to what I made. I picked up some of these collard greens, hummus, cucumber, apple and green onion and made some wraps! OMG they were so yummy. So fresh and delish.

Collard greens, cucumber, apple, green onion, carrot and hummus. YUMMMMM
My first attempt

Yah baby!

My work space today.
Collard greens, green onion, apple, cucumber, hummus, homemade pumpkin and hemp seed spread, and homemade mustard.
My lunch: Chickpea lentil veggie soup and some wraps

Look at how delicious that looks! And they are super easy to make. Just wrap and go! I great way to start off the New Year. It is after all International Diet Month. lol I just made that up, but its basically true. Although you would never know by coming to my office. People are still bringing in baked goods and chocolates. Driving me crazy!!! Come on! Everyone's on a diet in January.

The pumpkin and hemp seed spread I just made up. And I didn't write down a recipe but here's what I did:

Raw Pumpkin Hemp Seed Spread
Soaked 1 cup raw pumpkin seeds for the day. Then added those plus 1/2 cup raw hemp seeds, 1/4 red onion, 2 garlic cloves, a little water, dash of sea salt and blend in the food processor until smooth.

I've been eating that with carrots and celery and putting it in my wraps. Good source of protein and another million other health benefits. Hemp is so great for you. Its such a versatile plant. I'm almost out of my hemp seeds, looks like I'm going to have to go to Costco soon! Yah for Costco for selling them. Brilliant move. :)

Made a good little Thai lentil soup for tonight's Bachelor night!!! Also gonna roast some veggies and my friend Jessica is bringing the wine. Love it that I have friends who like to eat their veggies, drink wine and watch trashy shows on TV. Ha.

PS a friend told me that if you click on my pics that you can take a closer look at them. ALL of them at one time. Learn something new every day!

Peace
